Dish ingredients

2 cups sugar

4 eggs

1 tsp vanilla extract

1 1/2 cups vegetable oil

2 cups all-purpose flour

1/2 tsp baking soda

1/4 tsp salt

1 tsp cinnamon

2 tsp baking powder

1 1/2 cups carrots

1 1/2 cups apples

1 cup walnuts

Preparation

  1. Prep by grating carrots, chopping walnuts and apples.

  2. Combine sugar, eggs, vanilla, and oil.

  3. Sift together dry ingredients and stir into liquid mixture.

  4. Add carrots, apples and nuts. Pour batter into 9 x 13-inch pan and bake in 325°F oven for 60 to 70 minutes.

  5. Remove from oven, let cool and frost with cream cheese frosting if desired.
