Garlic Parmesan Sugar Snap Peas

This recipe is a healthy, delicious, and quick side dish to use your sugar snap peas. Trying them roasted and tossed in a crunchy parmesan cheese mixture gives you a great option to make one of your weekly meals a bit more interesting.

Garlic Parmesan Sugar Snap Peas

prep time: 5 min
cook time: 20 min

Ingredients

3 cups sugar snap peas; trimmed, rinsed, and dried

3 tbsp STAR roasted garlic olive oil

1/2 cup panko crumbs

1/4 cup grated Parmesan cheese

2 tbsp finely chopped fresh parsley

salt and ground pepper, to taste

Preparation

  1. Preheat oven to 400F.

  2. Grease a baking sheet with cooking spray or line it with parchment paper and set aside.

  3. Combine sugar snap peas and olive oil in a mixing bowl and toss to coat.

  4. In a separate bowl mix together panko crumbs, parmesan cheese, parsley, salt, and pepper.

  5. Add the panko mixture to the sugar snap peas and toss to combine.

  6. Arrange in the previously prepared baking sheet in a single layer.

  7. Roast for 15 to 20 minutes, or until crispy, turning once during cooking.

  8. Remove from oven and serve immediately.

Note: If you do not have “garlic olive oil,” use 2 tbsp minced garlic for the peas mixed with regular olive oil.
