Healthy Stir Fry

This week’s box has the perfect ingredients for a tasty stir fry. This recipe is a fast, easy dinner for the week that you can be sure is delicious and healthy for the family! It is also great to return to each week with various vegetables to keep variety in your diet.

Healthy Stir Fry

Ingredients

2 cups of cooked brown rice

1/4 cup of coconut oil

2 tbsp of minced garlic

1 tbsp of fresh ginger, grated

4 cups of a mixture of Asian Greens, Bok Choy, Onions, Carrots, Mushrooms, Broccolini, and Zucchini

1 lb of any meat or tofu chopped to bite size

2 tbsp of soy sauce

Juice from 1/2 of an organic lime

Sea salt and pepper to taste

1/2 a cup of vegetable, beef, fish, or chicken broth

Preparation

  1. Prepare the rice and set it aside.

  2. Put half of the oil in a deep skillet on high heat. Cook vegetables in the skillet until almost done.

  3. Add garlic and ginger to the vegetable mix and combine well.

  4. Turn the heat down slightly and add the remaining ingredients to the pan. Cook for a few minutes to heat.

  5. Serve when warm.
