Dish ingredients

3 large lbs sweet potatoes

4-5 tart apples

3/4 cup pure maple syrup

1/4 cup apple cider

1/4 cup (1/2 stick) unsalted butter

1/2 tsp salt

Preparation

  1. Prep vegetables and fruit.
    Prepare sweet potatoes. Peel, then cut crosswise into 1/4 inch thick rounds.
    Prepare apples. Peel, cut in half, remove cores and then cut into 1/4 inch thick slices.

  2. Preheat oven to 375°F.

  3. In 9x13 baking pan place potato and apple slices alternating, in tightly packed rows.

  4. Combine remaining ingredients in heavy medium saucepan and bring to boil over high heat. Pour hot syrup over potatoes and apples.

  5. Cover dish tightly with aluminum foil and bake 1 hour. Uncover casserole.
    (Can be prepared 3 hours ahead. Let stand at room temperature, basting occasionally with pan juices.)

  6. Reduce temperature to 350°F.
    Bake until potatoes and apples are very tender and syrup is reduced to thick glaze, basting occasionally, about 45 minutes.

  7. Let stand 10 minutes. Serve and enjoy!
