Dish ingredients
1 pt okra
1-2 yellow squash or zucchini
1 small onion
1/2 cup all purpose flour
1 cup cornmeal
1 egg
1/2 cup milk
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
vegetable oil
Preparation
Dice up the okra, squash and onions and place into a large bowl.
In another bowl, add the milk and egg and combine.
Combine the all purpose flour, cornmeal, salt and black pepper, and garlic powder. Pour mixture over the veggies.
Pour the egg/milk mixture over the veggies. Combine together with a spoon.
Place skillet over medium heat and heat up the vegetable oil.
Then, take a tablespoon and spoon into hot grease. The fritters will brown within 1 or 2 minutes and then turn them over to brown the other side. They brown very quickly so do not leave them unattended.
After the other side has browned, place the fritters onto paper towels.
Serve family style and enjoy!
