Corn and Tomato Salad

A great fresh summer side dish to pair with any grilled meat and veggies at the cookout.
You could even grill some corn on the cob to a nice char before cutting it off and adding to the salad for a fire-roasted flavor.

Corn and Tomato Salad

Ingredients

2-4 tomatoes, diced

4 corn cobs, kernels cut loose

1/2 red onion, diced

2 clove minced garlic

2 tbsp parsley, cilantro, or other fresh herb

1/4 cup balsamic vinegar

2 tbsp olive oil

1 tsp salt

1/4 tsp pepper

Preparation

  1. Grill or boil corn cob as desired. When cool, cut corn kernels loose from cob.

  2. Dice tomatoes, onion, garlic.

  3. Add tomatoes, corn and onion to a mixing bowl and mix well. Stir in herbs.

  4. In a separate bowl, whisk together vinegar, oil, garlic, salt and pepper.

  5. Pour over corn and tomatoes. Mix well.

  6. Let stand for 20 minutes for flavors to mingle or refrigerate covered.

  7. Stir well before serving. Add additional salt and pepper to taste if necessary.

  8. Add other ingredients, like basil, avocado, bacon crumbles, black beans, peppers, feta cheese or lime juice for additional variations.
