creamy bell pepper and kale dip

prep time: 10 min

12-16 servings

Dish ingredients

1 cup mayonnaise

17 oz container Greek yogurt

2 cups kale

1 1/2 cups bell peppers, assorted colors

8 oz can water chestnuts

3 scallions

1 clove garlic

1/2 tsp salt, or to taste

Serve with:

Assorted veggies, pita, or chips for dipping.

Preparation

  1. Prepare veggies. Finely chop kale, bell peppers, and scallions. Drain and finely chop water chestnuts. Mince garlic.

  2. Combine all ingredients (except extra veggies and bread) in a large mixing bowl, and stir well to combine.

  3. Keep chilled until ready to serve. Create a spread with veggies, pita or chips and enjoy!
