tomato, peach and corn salad

prep time: 10 min

2-4 servings

Dish ingredients

3 large heirloom tomatoes

2 large peaches

1/2 cup grape or cherry tomatoes

1 ear fresh sweet corn

1/4 cup red onion

1/4 cup crumbled feta cheese

3 tbsp fresh basil leaves

Balsamic glaze for drizzling over salad, optional

Salt and pepper to taste

Preparation

  1. Prepare fruits and veggies. Cut grape or cherry tomatoes in half. Cut corn kernels from 1 ear of sweet corn. Thinly slice 1 red onion, set aside 1/4 cup portion.

  2. Place sliced tomatoes, peaches, grape tomatoes, sweet corn, and red onion on a large plate or platter.

  3. Top with feta cheese and fresh basil.

  4. Drizzle with balsamic glaze and season with salt and pepper, to taste. Serve immediately.
