ginger cayenne paste

1 jar stored, used for flavoring multiple dishes
Dish ingredients
1/2 cup cayenne peppers
1/2 cup ginger
1 small onion
1 tbsp olive oil
1 tsp salt
optional to alter thickness and sweetness:
1 tbsp lemon juice
1 tbsp honey
Preparation
Cut the peppers length-ways and remove the seeds (Make sure you wear gloves)
Crush the peppers flesh either using a mortar or food mill
Chop the onion & ginger
Put all the ingredients (including salt and any optional ingredients) in the mixing bowl
Reduce it to a puree/paste using either the food mill, food processor, or blender.
Storage
There are several options for how to store your paste while you use it on your favorite dishes.
At room temperature, in a dark cupboard. Wash and heat sterilize resealable glass jar. Spoon finished paste into jar and cover with thin layer of olive oil. May be stored for several months prior to opening.
Refrigerate. Wash a resealable glass jar. Spoon finished paste into jar and cover with thin layer of olive oil. May be stored for several weeks.
Frozen servings. Spoon paste into ice cube trays and freeze. Once frozen, cubes can be removed and stored in freezer bags and removed one serving at a time as needed. May be stored for several months.
