salted cucumber and fig salad

prep time: 15 min

2-3 servings

Dish ingredients

2 cups cucumbers

1/2 tsp fine sea salt

3 to 4 large fresh figs

2 tbsp feta cheese

Preparation

  1. Prepare veggies. Chop or slice cucumbers, bite sized. Cut figs into quarters or slices, bite sized.

  2. Place cucumbers in medium bowl and sprinkle with salt. Stir well and let sit 15 minutes.

  3. Transfer cucumbers to serving bowl and top with figs and feta cheese.

  4. Serve right away or chill until ready to eat.
