Sunflower Microgreen Guacamole

This delicious twist on traditional guacamole is a fantastic way to use your fresh microgreens!

Sunflower Microgreen Guacamole Recipe

Ingredients

2 avocados

1/2 lime, juiced

1/4 tsp salt

2/3 cup sunflower shoots, chopped

1/4 red onion, finely chopped

1/2 jalapeno, finely chopped

Preparation

  1. Place avocado, lime juice, and salt in a bowl

  2. Mash into a chunky mixture.

  3. Stir in sunflower shoots, red onion, and jalapeno

  4. Top with a pinch of cilantro and/or red pepper to taste the way you prefer!

  5. Spread on your morning toast or dip with your favorite chip!
