Simple Arugula and Fennel Salad with Lemon Vinaigrette
The combination of arugula and fennel makes this simple salad an amazing pair with any number of meals you serve.
Arugula and Fennel Salad with Vinaigrette Recipe

Ingredients
5 ounces arugula
1 small bulb fennel, sliced or shaved
2 tbsp extra virgin olive oil
1 tsp lemon zest
1 lemon or 2 tbsp lemon juice
1/4 tsp salt
to taste pepper
to serve pecorino
Preparation
Combine the arugula and shaved fennel in a serving bowl.
Combine the olive oil, lemon zest, lemon juice, salt, and few grinds of pepper in a small mason jar, with a lid. Shake the dressing until smooth and creamy. Dip a leaf of arugula in the dressing to taste and adjust any of the dressing ingredients as needed to taste.
Pour dressing over salad and toss gently to combine. Add dressing a little bit of a time until you’ve dressed the salad to your liking.
Shave pecorino over the top of the salad.
Serve and enjoy!
