Beet Hummus
A new twist on hummus that is a nutritious & tasty snack. Get creative with your garnish, mixing it up each time you eat a bite!
Beet Hummus

Ingredients
1-2 beets
2 cloves garlic
1 1/2 cup chickpeas, cooked, drained and rinsed
2 tbsp tahini
2 tbsp extra virgin olive oil
2 tbsp lemon juice
2-3 tbsp warm water
1/2 tsp cumin
1/2 tsp coriander
pinch salt
pinch black pepper
serve with: sliced bread, radish or carrot, sesame seeds, parsley
Preparation
Preheat the oven to 400°F. Drizzle beets with olive oil then wrap beet and garlic together in foil. Place on a baking sheet and roast 30-40 minutes, or until tender.
When cool enough to handle, peel the beet skins under running water using our hands. Chop the beet and place it in a blender.
In a blender, add roasted garlic, chickpeas, tahini, olive oil, lemon juice, and water. Blend until smooth.
Add cumin, coriander, salt, and pepper to taste. Chill until ready to use.
Serve as a spread on sliced bread, garnish and enjoy!
