Beet Hummus

A new twist on hummus that is a nutritious & tasty snack. Get creative with your garnish, mixing it up each time you eat a bite!

Beet Hummus

prep time: 10 min
cook time: 40 min

Ingredients

1-2 beets

2 cloves garlic

1 1/2 cup chickpeas, cooked, drained and rinsed

2 tbsp tahini

2 tbsp extra virgin olive oil

2 tbsp lemon juice

2-3 tbsp warm water

1/2 tsp cumin

1/2 tsp coriander

pinch salt

pinch black pepper

serve with: sliced bread, radish or carrot, sesame seeds, parsley

Preparation

  1. Preheat the oven to 400°F. Drizzle beets with olive oil then wrap beet and garlic together in foil. Place on a baking sheet and roast 30-40 minutes, or until tender.

  2. When cool enough to handle, peel the beet skins under running water using our hands. Chop the beet and place it in a blender.

  3. In a blender, add roasted garlic, chickpeas, tahini, olive oil, lemon juice, and water. Blend until smooth.

  4. Add cumin, coriander, salt, and pepper to taste. Chill until ready to use.

  5. Serve as a spread on sliced bread, garnish and enjoy!
