Mashed Rutabagas

Rutabagas are a great way to mix up your dinner’s side dish with the season. The butter and sour cream make them creamy and delicious!

Mashed Rutabagas

prep time: 10 min
cook time: 45 min

Ingredients

1/2 - 1 lb rutabagas

1 tsp butter

1/4 cup full fat sour cream

1 tbsp fresh dill

1 tbsp chives

to taste salt

to taste pepper

Preparation

  1. Chop rutabaga and place in a medium pot, cover with 1 inch of cold water and bring to a boil. Add a pinch of salt and boil until tender (30-40 minutes).

  2. Drain water and return rutabagas to the pot. Reduce the heat to low, let rutabagas steam for 1-2 minutes. Mash with a potato masher (or wooden spoon).

  3. Add butter, sour cream, salt, and pepper to taste.

  4. Just before you serve, mix in fresh dill and/or chives. Serve and enjoy!
