zucchini radish salad

prep time: 15 min
4-6 servings

Dish ingredients

2 zucchini

1 bunch radishes

1 bell pepper

1 onion

1 bunch parsley

1/4 cup extra-virgin olive oil

1 lime

salt and pepper to taste

Preparation

  1. Prepare vegetables. Chop zucchini, radishes, bell pepper and onion to chunks of preferred size. Finely chop parsley.

  2. Place chopped zucchini, radishes, bell pepper, onion and parsley in a large bowl.

  3. Whisk olive oil with freshly squeezed lime juice in a cup or mason jar to make a dressing.

  4. Pour dressing over the salad and toss until combined. Salt and pepper to taste. Enjoy!

This salad is great on served on it’s own or on top of our lettuce mix or salad shoot microgreen mix, or beside your favorite entree.
