blackberry balsamic vinaigrette

cook time: 3 min

25-30 servings
(makes about 2 cups, serving size 1-2 tbsp)

Dish ingredients

1¼ cup fresh blackberries

½ cup balsamic vinegar

1 tbsp fresh lemon juice

1 tbsp Dijon mustard

2½ tsp granulated sugar

1 tsp salt

¾ tsp freshly ground black pepper

¼ tsp cayenne pepper

1 cup extra virgin olive oil

Preparation

  1. Add the everything except the oil to a small saucepan and place it over low heat. Stirring a bit, cook just to dissolve the sugar and warm the mixture, about 3 minutes.

  2. Remove the pan from the heat and use the back of a fork to macerate the blackberries to your preferred texture.

  3. Gradually whisk in the oil and blend until it's completely emulsified.

We recommend using this dressing on top of a fresh salad made with our lettuce mix, microgreen of your choice, and fresh veggies like carrots, cucumbers or radishes, plus your favorite nut or seed for a simple and healthy vegan salad.
