peach, tomato and mozzarella salad

prep time: 15 min

2-4 servings

Dish ingredients

3 ripe heirloom tomatoes, sliced

1 pint mixed small heirloom tomatoes

2 ripe yellow peaches

4 long green shallots

2-3 slices of fresh torn mozzarella

1 cup basil leaves

Dressing

1/2 cup extra virgin olive oil

1/4 cup red wine vinegar

1/2 tsp runny honey

1 small garlic clove

Preparation

  1. Prepare fruits and veggies.
    Slice heirloom tomatoes.
    Larger tomatoes to be cubed into bite size pieces, small tomatoes to be simply halved.
    Cut peaches by removing stones and slicing into wedge shaped pieces.
    Thinly slice long green shallots. Substitute onions as desired.
    Crush and finely dice garlic clove.

  2. For the dressing, whisk all the ingredients together in a small bowl.
    or alternatively, shake vigorously in a sealed mason jar.

  3. Place tomatoes in a bowl and season with salt to taste. Arrange tomatoes, peaches and shallots on a large serving platter with mozzarella and basil.

  4. Season, drizzle with dressing and serve family style.
