swiss chard, strawberry and feta salad

2-4 servings

Dish ingredients

1 bunch swiss chard

1 cup strawberries

1/2 cup crumbled feta

2 tbsp pepitas,
or favorite seed or nuts

Dressing ingredients

3 tbsp extra virgin olive oil

2 tbsp lemon juice

1 tsp liquid honey

1/4 tsp salt and pepper

Preparation

  1. Prep chard and strawberries. Remove hard stem and thinly slice swiss chard. Remove green tops and cut strawberries in fourths or smaller as desired.

  2. In a large bowl, whisk together oil, lemon juice, honey, salt and pepper.

  3. Add swiss chard, strawberries, feta and pepitas to dressing. Toss to coat with dressing.

  4. Refrigerate in airtight container for up to 12 hours.
