Baked Zucchini Sticks

Did you know zucchini, also known as courgette, is actually a fruit?
Typically served savory, like this crisp and tender baked zucchini and parmesan cheese recipe, you can cook and enjoy zucchini in a variety of ways and still get the health benefits of the many vitamins and minerals. This healthy dish can be a snack, side dish or the main vegetarian dinner and can flex to use as many zucchini as you have on hand. They are best served hot out of the oven with your favorite dipping sauce!

Baked Zucchini Sticks

prep time: 10 min
cook time: 20 min

Ingredients

3-4 zucchini

2 tbsp olive oil

For Parmesan-Thyme Topping:

1/2 cup parmesan cheese, grated

2 tsp thyme, fresh leaves

1 tsp oregano, dried

1/2 tsp paprika

1/2 tsp black pepper

1/4 tsp kosher salt

Preparation

  1. Trim off zucchini ends and cut length-wise into quarters (sticks).

  2. Heat oven to 350 degrees F.

  3. In a bowl, mix together the grated Parmesan, thyme and spices until well combined.

  4. Prepare a large baking sheet topped with a wire baking rack.. Lightly brush the baking rack with extra virgin olive oil (or use a healthy cooking spray.)

  5. Arrange the zucchini sticks, skin-side down, on the baking rack and brush each zucchini stick with extra virgin olive oil. Sprinkle the Parmesan-thyme topping on each zucchini stick

  6. Bake in heated oven for 15 to 20 minutes or until tender. Then, for a golden crispy topping, broil for 2 to 3 minutes more, watching carefully.

  7. Serve immediately as an appetizer with a side of tzatziki or red sauce for dipping.
    Or serve it as a side next to your protein of choice.
