mustard greens with apple cider dijon dressing

Dish ingredients

1/8 cup apple cider vinegar

1/4 cup canola oil

1 tbsp dijon mustard

1 tbsp lemon juice

1 bunch mustard greens

2 apples

1/4 cup dill,
or other favorite microgreens or herbs

salt and pepper,
to taste

Preparation

  1. Prep veggies and fruit:
    Prep mustard greens by washing, removing stems and shredding leaves into strips.
    Prep apples by washing, peeling and slicing into thin wedges.

  2. In a large bowl, whisk the apple cider vinegar with the oil, dijon mustard and lemon juice.

  3. Add the mustard greens, apples and dill (or other favorite microgreens or herbs). Season with salt and pepper to taste. Toss well, transfer to plate and enjoy!
