moist apple carrot cake

Dish ingredients

2 cups sugar

4 eggs

1 tsp vanilla extract

1 1/2 cups vegetable oil

2 cups all-purpose flour

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

2 tsp baking powder

1 1/2 cups carrots

1 1/2 cups apples

1 cup walnuts

Frosting ingredients

8 oz cream cheese (brick)

1/2 cup unsalted butter

2 cups powdered sugar

1 tsp vanilla extract

Preparation

  1. Prepare fresh ingredients. Grate carrots and chop apples into small pieces.

  2. Preheat oven to 325°F.

  3. Prepare cake by first combining sugar, eggs, vanilla and oil in mixing bowl. Mix until creamy and consistent.

  4. In separate mixing bowl, stir together with fork or whisk the dry ingredients: all-purpose flour, baking soda, salt, cinnamon, baking powder.

  5. Mix dry ingredients into wet ingredients. Mixing until well incorporated and smooth batter.

  6. Then add carrots, apples and nuts. Mix thoroughly.

  7. Pour batter into a lightly oiled 9x13 pan and bake at 325°F for 60-70 minutes.

  8. Let cool and frost if desired.

Simple Cream Cheese Frosting

(use vegan cream cheese and butter to keep the recipe dairy-free)

  1. Prep frosting while cake is baking.

  2. This is easiest to make with a stand mixer with whisk attachment, but you can also use a mixing bowl with handheld mixer or a large whisk for an arm workout.

  3. Beat the cream cheese until smooth. Add the butter and mix for about 30 seconds to 1 minute until well combined and smooth.

  4. Add the vanilla extract, then add powdered sugar about 1/3 cup at a time and continue mixing until fully combined with creamy consistency. More powdered sugar will stiffen the frosting, for a softer frosting use only 1 - 1 1/2 cups. Scrape down the sides of the bowl as needed.

  5. Pipe or frost on cooled cake.
