Arugula Salad with Walnuts, Apples, and Radishes

This salad is a wonderful mix of spicy arugula leaves, tart apples, piquant radishes, and buttery walnuts - flavors that complement each other. When you add in the floral sweetness of the rose vinaigrette, you get a delightful dish that will flatter any guest!

Arugula Salad with Walnuts, Apples, and Radishes

Ingredients

12 oz Arugula (or several handfuls), washed, spun, and patted dry

2 inches apples, cut into ½-1" chunks

2 watermelon radishes, washed, scrubbed, and cut into half-moons

A handful of walnut pieces

For the Vinaigrette:

2 tsp rose preserves

2 tsp honey

4 tbsp extra-virgin olive oil

Juice of 1 lemon

Sprinkle of cinnamon

Salt to taste

Preparation

  1. Toss together salad ingredients except for walnuts

  2. Whisk together vinaigrette ingredients, adjusting rose and sweetness to taste

  3. Toss salad with vinaigrette.

  4. Sprinkle with walnuts.

  5. Serve and enjoy!
