Cucumber Blueberry Salad

A refreshing summer salad with loads of nutrients from different types of lettuce, crisp cucumbers, and sweet blueberries. Try topping it off with the broccoli microgreens from this week’s box for a uniquely delicious flavor!

Cucumber Blueberry Salad

prep time: 10 min
cook time: 5 min

Ingredients

8 cups lettuce mix

1 large cucumber, peeled and chopped

1 pint fresh blueberries, cleaned and dried

1 cup feta cheese chunks

Broccoli microgreens to taste

Salt to taste

Pepper to taste

Preparation

  1. Wash the lettuce and let dry. Make sure the lettuce is dry before adding to a large bowl or platter. Toss lettuce with salt & pepper.

  2. Mix half of the cucumbers and blueberries in with the salad.

  3. Put the rest of the cucumbers and blueberries, along with the feta cheese, on top of the salad.

  4. Sprinkle top lightly with salt and pepper.

  5. Top with microgreens as desired.

  6. Enjoy!
