onion, mushroom, apple puffs

prep time: 5-10 min
cook time: 50 min

16 puffs

Dish ingredients

1 tbsp vegetable oil

1 small onion or several green onions

2 oz mushrooms

1/2 tbsp butter

1/2 tart apple

1/2 tsp sugar

1 oz shredded parmesan

1 tbsp chives

1/2 tsp rosemary

8-10 oz puff pastry
(or make from scratch)

salt and pepper, to taste

1 egg

Preparation

  1. Pre-heat oven to 400°F and line two baking sheets with parchment paper.

  2. Prepare veggies.
    Prepare onion by thinly slicing.
    Prepare mushrooms by thinly slicing.

  3. Heat vegetable oil in a skillet over medium heat, and cook the onions with a little salt for 20 minutes. Stir occasionally. Add in the mushrooms and cook 5 more minutes, until onion is golden brown and mushroom is tender. Place the mixture in a bowl.

  4. Melt butter in the same skillet and add apple pieces and sugar. Cook until softened, about 10 minutes. Add into the bowl with onion and mushrooms. Add parmesan, chives and rosemary into the bowl and mix. Season with salt and pepper, to taste.

  5. Using a pizza cutter or sharp knife, cut the puff pastry into small squares. Store-bought pastry works great for this recipe as it’s easy to cut into pieces, but if you’re feeling great and want to try to make the puff pastry from scratch, check out this recipe from King Author Flour. Place them on the prepared baking sheets and brush with a beaten egg.

  6. Place a heaping teaspoon of filling in the middle of each puff pastry bite. Sprinkle with more parmesan, if you want. Bake for 20 minutes. Let the tarts cool a little before serving. Drizzle with more chives, if desired.
