Dish ingredients

6 cups watermelon

2 medium yellow summer squash

2 medium zucchini

1/2 cup lemon juice

12 fresh mint leaves

1 tsp salt

8 cups fresh arugula or other baby or microgreens

1 cup crumbled feta cheese

Preparation

  1. Prep veggies. Cut watermelon into small cubes. Cut squash and zucchini into small cubes or slices, bite sized. Chop or tear fresh mint leaves.

  2. In a large bowl, combine watermelon, squash, zucchini and mix with lemon juice, mint and salt.

  3. Just before serving, toss with greens and feta.

  4. Enjoy!
